EPDM gaskets have a very good water and steam resistance, however they do not hold up well to animal fats, oil and most acids because of their polymer structure. EPDM (Ethylene Propylene Diene Monomer) is a USP Class VI material that, and operates best in a temperate range of (-30° - 300°F).
 
EPDM has better resistivity to general cleaning chemicals than silicone.
